Origin of grapes

Grapes are sourced from our own vineyard at Glinado Village in Western Naxos. A single plot of the white varieties Potamisi, Aidani, Monemvasia together with the red Fokiano and Mandilaria. Dry-farmed, low yielding vines, about 15 years old, grown organically. Sandy-clay soil with a high proportion of granite trashes. PGI Cyclades

Vinification

The approach is linked to the traditional paradox of vinifying white and red varieties together. The single harvest approach and co-fermentation represent the tribute to local winemaking practices. A classic white vinification is conducted after the direct pressing of the totality of the grapes. Vinification starts by indigenous flora and the temperature is maintained controlled at 16-18° aiming to develop the special varietal characteristics. Vinification in inox tank, sur-lie ageing for 8 months with few lees stirring.

Description

Medium gold color with copper hues. Complex nose with herbal and fruity character. Dried herbs, chamomile, black tea together with pear, bergamot and melon notes. Tropical, citrus peel notes in the background. Medium body with chewy texture, intriguing tannicity for a ‘white’ wine and herbal aromas. Vibrant acidity with sweet finish lead to a balanced wine.

Potamisi

Potamisi is a rare Greek indigenous variety, minimally explored for its aptitude and characteristics. Its history is linked to Naxos, as it is one of the main varieties of this historic island. A part of our vineyard is selected separately, in an effort to discover the variety’s potential and to showcase its characteristics.

Origin of grapes

Vinification

Classic white vinification in stainless steel tank is conducted after a short cold soak and pressing. Vinification starts by indigenous flora and the temperature is maintained controlled at 16-18°C in order to bring out the particular varietal characteristics and explore the main variety of our island. Sur lie aging, occasional lees stirring for approximately 8 months before bottling in order to develop the mouthfeel and the aromatic potential.

Description

Medium straw color with yellowish hues. Intense nose, herbal character together with floral and spicy notes. Sage, lemon blossom on the first touch together with stone fruits. Notes of citron, fennel and spicy characteristic, hints of minerality complement the setting. Crystalline mouthfeel with bright acidity and minty, white pepper tension. Complex, delicate and harmonious with saline long finish.
